Toasty S'Mores
'MERICAAAA!!!
How was everyone's weekend? BBQ's, parades, American Flag cakes. Aside from Memorial Day weekend, the real kick off of Summer for me is the S'more. They are obviously not a summer-only treat, but I love sitting around the bonfire with my home slices, roasting marshies and wishing I put more sunscreen on mah butt. #Lobsterrrr
On Monday I had some leftover s'mores stuff so I decided to shake up the s'moreness:
Preheat the oven to 350.

Preheat the oven to 350.
Assemble s'mores as pictured (graham cracker, chocolate, marshmallow).
Pop in the oven for 5-7 minutes, or until the marshmallows are golden brown and puffy.
Eat one, then have s'more.
Hahahahahaaaaa!

Bacon, Red Onion and Brussels Sprouts Dip
Dippity Do Daaaa! I looooove dip. Dips make any party go from a 10 to a 45. I want to throw a party where all we eat is dip. BYOD. Get it?!?
This recipe combines my favorite thangs: Brussels sprouts, bacon and red onion - 3 things that are great alone, but when you combine them to make achild food item, they become fan. tas. tic.
What you will need:
Preheat the oven to 325 degrees.
This recipe combines my favorite thangs: Brussels sprouts, bacon and red onion - 3 things that are great alone, but when you combine them to make a
- An 8 oz. package of cream cheese at room temperature
- 1/2 cup of mayonnaise
- 1 cup of chopped Brussels sprouts
- 1/2 cup of chopped red onion
- 4 strips of bacon, sliced
- Parmesan cheese for sprinkling
Preheat the oven to 325 degrees.
Cook the sliced bacon and set aside on paper towels to absorb the excess grease. Let cool for a few minutes.
Combine the cream cheese and the mayo in a large bowl, then add the sprouts, onion and bacon. Stir to combine.
Pour the mixture into a baking or pie dish, and spread evenly using a rubber spatula.
Sprinkle Parmesan cheese on top of the mixture to form a thin layer.
Bake for 10-15 minutes, or until the cheese starts to turn golden brown.
Serve hot and enjoy!
Note: Both Tortilla chips and Ritz crackers taste great for dip retrieval :)

Baked Zucchini Fries
Warning: What you are about to SEE is not pretty. However, what you will TASTE (when you make this recipe and not lick your screen) will be delicious.
Another Warning: I totes had a brain fart (classy right?) on Friday and did not actually POST my Screen Cap Friday roundup #whoops. You will find it below for your viewing pleasure, seeing how this recipe is not eyeball friendly.
My initial plan for this recipe was to bread the zucchini sticks in panko bread crumbs, but after breading a few of the sticks, it was turning into a mush contest. Not cute. So to the traditional italian-style bread crumbs we go! I cut the zucchini into pieces the size of french fries, breaded them using the flour/egg/breadcrumb process, then RE-egged/breadcrumbed for an additional crunchy layer. Fabulous.

- 2 small zucchinis
- 1 cup of all purpose flour
- 4 eggs, whisked
- 2 cups (maybe more) of italian-style breadcrumbs
- Olive oil
Preheat the oven to 325.
Cut the zucchini in half width-wise, then cut each half into quarters. In 3 separate bowls, pour in the flour, egg and breadcrumbs. Dip the zucchini sticks one by one into the flour, egg, and breadcrumbs. Once you have the first breadcrumb layer on, dip the zucchini stick into the egg and breadcrumbs again to create 2 layers. Set aside on a greased baking sheet. Continue these steps until all of the zucchini are breaded.
Drizzle the zucchini sticks with some olive oil, and bake for 10-15 minutes, or until golden brown.
These are great as a side for dinner or for a little afternoon snackie :)

Chocolate Nutella Ice Cream
Need I say more? Didn't think so.
Actually I do. Remember this pic I posted over the weekend? Ignore it. Forget it happened. Use that little pen thing that Will Smith had in Men In Black and erase it from your memory.
This originally started out as an attempt to make ice cream pops, but I couldn't get the pops out of the ice cube tray, and I ended up scooping the tray and dumping the contents into a loaf pan. Good thing I also sort of planned for this and prepped a separate loaf pan and made it all pretty and stuff.
We had a little BBQ for Mommy's Day and let me tell youuuuuu - this ice cream was gone in 2.5 seconds. #GoMe.

- 2 cups of heavy cream
- 1 can of sweetened condensed milk
- 1/2 cup of milk chocolate chips, melted
- 1 small jar of Nutella (you won't use the whole thing.......maybe)
In a large mixing bowl, whip the heavy cream until soft peaks form. Pour in the sweetened condensed milk and fold in to combine.
Melt the chocolate chips in the microwave in 30 second increments.
Pour the melted chocolate into the whipped cream mixture and stir to combine.
Take 1/2 cup to 3/4 cup of Nutella and pour into the mixture. Stir using a rubber spatula, breaking up the Nutella as you go. Once combined, pour into a loaf pan. Next, I took a pastry bag, filled it with Nutella, and added some MORE onto the top of the ice cream mixture, but you can skip this if you want.
Freeze for at least 6 hours or overnight.
