Today's post is inspired by Food52's column "Not Recipes". It is exactly what it sounds like - it tells you how to make something, but with no recipe. These enchiladas were in my mind all dayyyyy and they came to life just like I imagined. Oh yeah, and I didn't write down the recipe heehee :)

Chop some chicken, cook it, then add enchilada sauce, black beans, green chiles, and corn |

Stuff tortillas with the mixture and line them up in a baking sheet. Pour more enchilada sauce over the enchiladas, and top with refried beans |

Top with all of the cheese from Aisle 3 |

OR forget the refried beans, and top with all the cheese, then top THAT with some green chiles |
|
All. The. Cheese. |
|
Bake at 350 Degrees for 5-7 minutes |
