Welcome/Hola/Bonjour/Jambo

Well hello there!

Thank you for visiting my blog!  In this space I plan on sharing recipes that are simple, but still satisfy one's raging hunger at the end of the work day :)  I decided to call my blog Yoga Pants Kitchen because yoga pants are life.  And food is life.  And together they make love and harmony (cue sounds of the rainforest and angels singing).  I call the food I make "semi-homemade" - thanks Sandra Lee- because while I do enjoy making certain things from scratch, sometimes the universe just does not permit it #aintnobodygottimeforthat.  I also have been working on being more creative in the kitchen and using random items from my pantry to make something fantastical.

Today's recipe is a perfect example of this.  I shall call it "Brussels Sprout and Red Onion Pizza".  Original right?!  Just smile and nod :)

What you'll need:

- 1 roll of croissant dough (I prefer Pillsbury)
- Shredded mozzarella cheese (around 2 handfuls)
- Around 2 cups of Brussels sprouts (halved or quartered depending on their size)
- 1 cup of chopped red onion
- 1 handful of parmesan cheese for sprinkling
- Olive oil for drizzling
*Serves 2

Unroll the croissant dough on a ceramic pan and smush (that's a word right?) it together to make one big sheet.  Put it in the oven for about 5 minutes to let the middle of the dough cook, but keep an eye on it, as you don't want the dough to brown.  Once that's done, spread a layer of mozzarella onto the hot dough and layer that with the brussels sprouts and red onion.  Sprinkle with a thin layer of mozzarella and parmesan and finish it off with a drizzling of olive oil.  Pop that baby in the oven for 10-13 minutes.  Enjoy!
