Chocolate Nutella Ice Cream

Need I say more?  Didn't think so.

Actually I do.  Remember this pic I posted over the weekend?  Ignore it.  Forget it happened.  Use that little pen thing that Will Smith had in Men In Black and erase it from your memory.

This originally started out as an attempt to make ice cream pops, but I couldn't get the pops out of the ice cube tray, and I ended up scooping the tray and dumping the contents into a loaf pan.  Good thing I also sort of planned for this and prepped a separate loaf pan and made it all pretty and stuff.

We had a little BBQ for Mommy's Day and let me tell youuuuuu - this ice cream was gone in 2.5 seconds.  #GoMe.

Ever since I found the recipe magicalness that is no-churn ice cream, I've been dying to try making something with my BFF, Nutella.  And here we are today.  Enjoy my friends.  And you're welcome ;)

What you will need to serve 10-14:
  • 2 cups of heavy cream
  • 1 can of sweetened condensed milk
  • 1/2 cup of milk chocolate chips, melted
  • 1 small jar of Nutella (you won't use the whole thing.......maybe)
In a large mixing bowl, whip the heavy cream until soft peaks form.  Pour in the sweetened condensed milk and fold in to combine.

Melt the chocolate chips in the microwave in 30 second increments.

Pour the melted chocolate into the whipped cream mixture and stir to combine.

Take 1/2 cup to 3/4 cup of Nutella and pour into the mixture.  Stir using a rubber spatula, breaking up the Nutella as you go.  Once combined, pour into a loaf pan.  Next, I took a pastry bag, filled it with Nutella, and added some MORE onto the top of the ice cream mixture, but you can skip this if you want.

Freeze for at least 6 hours or overnight.

SERVE!!

Screen Capcha Friday

As I scroll through Instagram/Facebook on the hourly daily, I find myself screen shotting things that make me LOL, things that make me get a little teary, and things that I screen shot and immediately send to Boyfriend with a "please buy me onneeeeeeee" text (it's usually a puppy FYI).  Here are a few screen shots, or screen caps as I call them, that I had in my Camera Roll this week.

Happy Fri-dizzle my bizzles!!  Enjoy your weekend and don't forget to treat Mom extra special!

Summertime Quesadillas

"Make yerself a dang quesa-dilla" is what I thought to myself when I got home yesterday.  I was starrrrved, and the sun was shining, and I had some lovely avocados waiting to be eaten, and I wanted to sit outside and eat dinner because SPRING!!

What made this quesadilla a success was the extra large tortillas shells I casually had laying around.  From there I cleared the fridge of any leftover veggies and chicken.  Flavorrrrr!!

What you will need for 1 quesadilla:
  • 1 large tortilla shell
  • Shredded cheddar cheese for sprinkling
  • 1 cup of cooked chicken, cut into small slices
  • 1/2 cup of red onion, chopped
  • 2 scallions, chopped
  • 1/2 cup of corn
  • 1 avocado, sliced
Heat a large non-stick pan with a tablespoon of olive oil for about 1 minute.  Place the tortilla shell in the pan and sprinkle with a handful (or two) of the cheddar cheese.

Top with the chicken, onion, scallions, corn, and another handful of cheese.  When the bottom layer of cheese starts to melt, fold the tortilla in half.  Let the tortilla crisp up for a few minutes, then flip to brown the other side.

Move to your plate and top with the sliced avocados.

Yuuuum!  I love the combo of the onions/scallions with the cheese and chicken.  Oh yeah, and SUNLIGHT!!!

Enjoy lovers!!

Guacamole for One

Yes, man at chipotle, I know that guac is extra.  No, I don't cerrr, and please give me extra.

Happy Cinco de Mayo peoples!!!  Today I have for you, guacamole for one.  Because if you're an animal like me, you hate sharing prefer not to share (but do it anyway obviously), and are prone to massive episodes of hanger.  In addition, I have no self control, so it's best to make single-serving guac, as opposed to making (and eating) for 45.

What you will need:

  • 2 avocados
  • 1/2 cup of red onion, chopped
  • 1/2 to 1 cup of corn
  • 1/4 cup of tomato
  • 1 dash of lime juice
  • Salt to taste

Halve the avocados and spoon into a large bowl.  Mash slightly with a fork.  Add the onion, corn, tomato, lime juice, and salt, and stir to combine.  Taste, and season additionally if your heart desires.

Hide in a dark corner and eat quickly so no one sees you.  Because I'm an ass.  Or share.  Because you're nice.
