Bacon, Red Onion and Brussels Sprouts Dip

Dippity Do Daaaa!  I looooove dip.  Dips make any party go from a 10 to a 45.  I want to throw a party where all we eat is dip.  BYOD.  Get it?!?

This recipe combines my favorite thangs:  Brussels sprouts, bacon and red onion - 3 things that are great alone, but when you combine them to make a child food item, they become fan. tas. tic.

What you will need:
  • An 8 oz. package of cream cheese at room temperature
  • 1/2 cup of mayonnaise
  • 1 cup of chopped Brussels sprouts
  • 1/2 cup of chopped red onion
  • 4 strips of bacon, sliced
  • Parmesan cheese for sprinkling

Preheat the oven to 325 degrees.

Cook the sliced bacon and set aside on paper towels to absorb the excess grease.  Let cool for a few minutes.

Combine the cream cheese and the mayo in a large bowl, then add the sprouts, onion and bacon.  Stir to combine.

Pour the mixture into a baking or pie dish, and spread evenly using a rubber spatula.

Sprinkle Parmesan cheese on top of the mixture to form a thin layer.

Bake for 10-15 minutes, or until the cheese starts to turn golden brown.

Serve hot and enjoy!

Note:  Both Tortilla chips and Ritz crackers taste great for dip retrieval  :)
